I use a one speaker PA setup. It's a sax player trick. Add tube pre
amp, compression and some effects and you get a pretty fat sound when
you want it.
Since PA's are engineered for open source inputs, feedback is not much
if an issue.
My JBL Eon 10 punches through a wall of electric band without much
trouble. This is not so much out of pure volume but out of tremendous
acoustic efficiency.
I use a Beringer mixer to control volume. It is a multi channel mixer
so I can have multiple mics. It's like having a guitar with multiple
pickups.
Finally, I can grow the system as needed since the Eons daisy chain.
However, I avoid that to keep it one load rig.
Now if you have to have that vintage Chicago Blues sound forget the
above and check out the rigs the blues cats use.
