Respectfully, it costs money to start and run a business.  I'm always amazed how many people think its easy, but it's never the ones who have actually done it.  I guess I figure we all have choices to make, even musicians.  If someone doesn't pay enough to make it worth your while, don't play.  The owner is under no obligation to pay more than he/she wants to.  Employees and artists can choose to not work for what's offered, of course.
