For the same reason all professionals study at university. Private lesson instructors are but one aspect of a formal music education. Students get so much more. Their education is time-tested, systematic, varied, and deep. Students have opportunities to study with many teachers. What is more, the university setting provides a community of like-minded people who cross-pollinate one another. Does one size fit all? Of course not. But the depth of knowledge and experience concentrated into a four year music degree would be tough to replicate on one's own or under the tutelage of a single private teacher.
