Hi Matthew,

I think I mis-understood you intention.  I don't think you want "shim stock" - you probably want feeler guages, as Ken Hildebrand has described in his response (included here).  Shim stock is sheet metal of various types supplied in very precise thickness, for general use by machinists and others.
