If you check out the McMaster-Carr website you will find shim stock, and a million other things!  For my various projects I have dealt with them a few times and always got quick response and no problems.  They have all prices, sizes etc online and you can make purchase online. 
The problem I have is that they only sell to US addresses (security related paperwork was too onerous when exporting they told me).  I'm in Canada so have to get a friend to receive and remail for me, but if you are in the states then McMaster-Carr almost certainly will have what you want.  (look under "raw materials")   Good luck.
