You can record off the sound board *if* everything (including drums) is
mic'd. But sometimes that doesn't sound great because you can't hear the
audience that way. See Pat Ramsey's Live at Big Bend Bash for an
example. I love that disc and play it very often (mainly for Pat's sweet
harp riffs and Dave Renson's great guitar) but you can tell it sounds a
little weird when he's addressing the audience, and when you can't hear
their noise/applause before/after cuts. So some folks have mics out
there to blend in the audience as well.
All this can be done with a Microtrack (which I think has fallen
somewhat out of favor) or Zoom, which have been discussed quite a bit on
these lists.
After the recording you can edit/mix it all up in Audacity or any other
number of tools.

Got the chance to do a decent live recording at an upcoming gig. Any
advice on how best to achieve this? We are a six-piece: guitar, harp,
drums, bass, keys, vocals. We'll be using a 600W PA with a sound guy and
he'll have five mics to mic up the band.
I'm guessing one important choice is whether the instruments levels are
set in stone or whether the set up allows for some editing and post
production.
