At my grandfather's wedding earlier this year, I played Amazing Grace. 
The way I did it was try and have a "new orleans funeral" approach to 
it. I played the theme three times. The first time was very slow and 
melancholy, very close to the original melody, no ornementations. The 
second time was slightly more upbeat, bringing up ornementations and 
harmonies, and a little improvisation. The third time was quite joyful, 
with some improv around the main theme and just fell back on the slow, 
core theme on the final phrase. Maybe you could try something similar 
with Oh When the Saints ?
