Well, since you've had the experience, now you know how to approach the club owner in negotiating the jam - first of all, guaranteed payment needs to be discussed. Then talk about rowdies/bouncers/support for a clean jam. All need to be on the same page regarding this. If the clubowner bows down to the drunks because they are the ones buying all the liquor, politely leave the negotiations as a failure of both parties to agree.
 
You do need the support of the bouncer - as in your story, if ignoring doesn't work and the drunk pushes the issue with physical movements (getting in your face, grabbing a mic), you should be able to gesture to the owner/bartender/bouncer and have him move in to physically remove the problem quickly.
