I have a AC powered Dremel plugged into a potentiometer pedal so I can
reduce the RPMs.
The other Dremel that I use is battery powered, and a has a slider
adjustement to do the same.
And I have acquired various bits for these, the more the merrier.
Having said that, I still use other tools to remove material--sanding wands
are cool, and that draw scraper comes in handy.
