Digitech offers a piece of hardware that you can drop an iPad into--the ipad is basically enclosed by the hardware--to create a more or less infinitely configurable multiFX rig.  There are a lot of virtual effects processors on tap, and you can order them in any sequence you like. The hardware has all the external connections, hand and foot controls, etc. built into it. This is well beyond what you asked for (big dif between an iPad app and a piece of hardware that costs around $700) but it's also a very cool setup, and it will help protect your iPad on stage. IK Multimedia offers a Guitar Rig app for the iPad.  Guitar Rig is one of the leading computer based amp modelers, and the iPad version is essentially the same. If you've already got the iPad, it's the least expensive way to get a pro-grade (meaning great sounding, reliable, and flexible) amp modeling and FX rig. I know there are killer recording apps available for iPad, but I don't know what they are, so I'll stop here.  I did see a piece in Recording magazine this month about a 48-track DAW running on the iPad that sells for $60. That's probably the high end for recording apps on the iPad.  The reviewer thought it was pretty great.
