Hi Gavin - Nickel and chrome plating, used in the majority of harmonica cover plates, and mouthpieces, both contain nickel which some people are allergic to. Stainless steel also comes in two basic types, 300 and 400 series, and usually the cheaper 400 series is used by some harmonica manufacturers, and it too contains some nickel.  So if you want to avoid nickel,  the best choice is the Hohner CX12, which has a very tough plastic body, and cover. 

Nickel allergies are fairly common, sometimes affecting the hands, and often the lips, and avoidance is the only answer.
