Abner, it's not so much how they sound, but how much difference there is in ease of playing. With a custom harp, you can bend notes more easily, you can get clear tones with much less air and much less effort and there is usually more volume with less effort. There are many advantages to custom harps. Some players benefit more than others. Some players (like myself) need only the average tweaking to get harps that work for them. I have learned to do this myself, though I do have harps from at least 3 well-known cusomizers.
Don't get in a hurry. But you should try at least one custom harp as you advance in playing skills.
