I too am a fan of the 'stick tambourine'. Many dollar stores have them. They're more less jingly than a full tambourine, even without a skin.

My favorite, however, is the washboard with two whisks. Not particularly loud or overbearing, but quite showy for the audience, especially with a small cowbell and/or block attached.
