"Z" stands for impedance, usually measured in ohms.  It is the ratio of voltage divided by current in an electronic circuit.  It doesn't make much sense applied to a harmonica alone.

In a microphone circuit, low-Z usually is associated with XLR connectors and impedances of a few hundred ohms.  Hi-Z is usually associated with TRS  "phone" plugs and impedances of thousands of ohms.

You can buy converter transformers so you can use a low-z mic with a hi-Z amp or vice versa.
