Joe mentions 'waterfalling' in relation to 'Take Five' and 'Harlem Nocturne', and possible others in the past.  I don't think he means anything too specific, just a concept of 'tumbling down' in some sort of repeating or sequential pattern. In 'Take 5', I would guess he's talking about the bridge, which is a descending scale or step pattern, and in 'Harlem Nocturne', it's the descending stacks of fourths. 
I'd suggest another pretty obvious one, but this time concerning thirds, would be the 'A' (as in AABA pattern -verse, verse, bridge, verse) parts in 'Jitterbug Waltz'.
