I would imagine you'll get a variety of different answers to this
question, as there are so many great solos to choose from. But any good
cross section would almost have to include his recording of "Alfie".
There are actually several live versions kicking around in addition to
his studio recording from the album "Evets Rednow". And then there's
this incredible version, from a TV show with Burt Bacharach:

It is really excellent.
Another one for the list would be "Isn't She Lovely" from his album
"Songs In the Key of Life".
As well as some stuff from his early recordings, like "Fingertips" and
"For Once In My Life".
And many, many others..... Hopefully other folks will fill in the blanks.
