Though the video is kinda old it's done pretty much the same today. 
What didn't become clear in this video is, that there's a second 
plate on the tuning table, that works as a reference plate. It's 
tuned very accurate.
The corrosponding reeds on both plates will always be played both at a 
time and the reed to tune is worked on until there's no beating 
anymore.
