Hi Tony
I have been very impressed by Adam Gussow's youtube lessons
as well. I record them with Keepvid http://keepvid.com/ This downloads the videos as a html and then you have to change the suffix from .html to .flv, and then find a flv file viewer to watch the videos. I also use a program called Cinema Forge to change to .flv files to .mpeg which makes the clip playable on a lot of different players.
Now to answer your question about turning the clips into mp3's use Audacity http://audacity.sourceforge.net/ .It's all free software and I have had no trouble with any of it.
