I've read a little bit on this, and I have to say, it's not 100%
straightforward, since DVDs have very serious encryption in the form of
digital copy protection, as you seem to know.  If you Google around for "DVD
decrypters", you might find something that splits the encrypted movie into a
video file and an MP3 audio file.

Failing that, you can certainly make an analog audio recording of the DVD.
Just plug the RCA audio outputs from your DVD player into the LINE IN on
your computer, and use any computer-based digital audio recorder to
re-record the soundtrack.  There will be some losses (due to additional D-A
and A-D processes), but nothing particularly serious, especially if your
computer has a decent sound card.  You'll have to do this in real-time, of
course, which is tedious.

I like the free (shareware) program called "Audacity" for audio recording,
although it has a somewhat greater learning curve due to its use of a
proprietary internal recording format on disk (i.e.,  you can't get saved
recordings *out* of Audacity unless you export them to either MP3 format or
.WAV format (and many others).  It also runs on Macs and Linux.  The
exported WAV file can be burned directly to an audio CD using any CD burning
software.
