Matt,

Try a book called HAPPENIN' HARMONICA METHOD & SONGS (JT  
Publications).  It's got many simple melodies that do not require  
bending.  I've also included a copy of "He's Got the Whole World In  
His Hands" to get you started.  It's a good idea to get your students  
interacting with standard musical notation ASAP.
