How low tech do you want to go? You can just stick an adaptor onto the  
mic and play right in through the mic input on the computer. Hold  
still and keep the cable supported or you could get some noise. Use  
Audacity for the software. I've done this with a bullet mic. I won't  
tell you it's wonderful but it is feasible.

If you want to spend big bucks--ART has a USB preamp for $100.00 with  
multitrack software. It's high on my list of new toys I must  
get.$125.00 will get you a Line 6 preamp with all sorts of modeling  
amps.
