Just a quick comment:

I like to record both at the same time: microphones to the wind _and_ a 
mix from the board, whenever possible. I remember doing a very good live 
video shoot at an outdoor live concert, with a beautiful mix off the 
board. Sounded great, except, of course, when the crowd was going nuts 
and you could see the clapping and waving and jumping up and down, 
y'couldn't hear a note of applause :-) Oh yeah, and don't place the mics 
around where people are talking--it's disconcerting to hear 
conversations getting in the way of the music.
