The reason to require the missing note is that it is the "leading tone", the
strongest cadence in all of music.
If it hadn't been in the original, you wouldn't miss it--but that is the
"hook" of the tune, with the rest of it being very pentatonic. The other
hook is the flat five in the last part of the melody (bar 11-12--it's the
"and" of 4 in bar 11).
