I don't know whether it's the right answer, but I don't take the plates off. 
 I use the Lee Oskar gapping tool, bent end, to push down gently through 
the slot to increase the gap and to reach down the hole to push it up to 
reduce the gap.  Just be careful to stay centred on the reed.  Shine a big 
light on what you're doing and don't try it after a pint or four!
