I've read that studies have proven that wood cutting boards sanitize 
themselves, the toxins in the wood kill bacteria. This is how trees protect 
themselves, note that trees seldom go to the doctor. A billion years of 
evolution at work. Plastic apparently is not nearly as good - only 50 years 
of evolution.
