middle eastern scales?

Does anyone know specific tones, progressions, etc. for "middle eastern"
sounding melodies...I'm thinking of the sounds of Djivan Gasparian playing
the duduk, and also some of the sounds on the soundtrack of "the Passion of
the Christ".
