I agree 100% with what you say about dynamics, but that's not why I use 
a volume control.
I'm a sideman and have to play with loud guitar players in different 
rooms, setup in whatever corner they give me.  A volume pot gives me 
fingertip control of feedback in virtually any situation.
I dial my amp pretty wide open and then creep the mic volume up until it 
starts to feedback, then cut it back just a hair.  At that point, I use 
my own dynamics, and use my own air column to come in stronger on my break.
I've thought of getting a mic rigged with an on/off switch and try 
cutting it on after I make my seal, but I haven't gotten around to it yet.
I prefer the control in my hands, not on the floor where somebody could 
step on it.
