I've used a desktop USB interface like the Mackie Blackjack in the past. 
 With my iPad, I've used iRig, but the more expensive adapters are better 
in sound and latency.  There are XLR-USB cables and such, but I like using 
a preamp.  The Blackjack has very nice preamps for the cost.
