Music "theory" texts usually (Actually in every text that I have seen)
separate the definition of "key" from "key signature". They are not to
be equated. Sometimes they coincide sometimes they don't.

I agree with you that there is nothing magical or mystical about the
definition of "keys". But the definition is often abused and assigned
undeserved importance.
