Well, the fates play interesting tricks. Al Kooper was in the studio when  
Dylan was recording "Like a Rolling Stone". He was asked if he could play the  
organ - being young, dumb and full of confidence, he said "Sure", when he 
really  didn't know much about organ, but had a little keyboard influence. The 
result of  his pedestrian noodling around became that signature organ riff that is 
totally  identified with this tune.
